This quinoa fried rice takes 15 minutes and is an easy weeknight dinner recipe that allows you to use any leftover vegetables you have at home. It’s really delicious, healthy and you will not want to stop eating it.
Quinoa Fried Rice
Step 1. In a pan over medium heat, add one teaspoon coconut oil. Add in the eggs and scramble slightly with a pinch of salt and pepper. Remove from pan into a bowl and set aside.
Step 2. Increase heat to high hat and add the other teaspoon of coconut oil and the cooked quinoa. Stir quinoa while sizzling until brown.
Step 3. Reduce heat to medium-high and add in the carrots, garlic, frozen peas, liquid aminos and rice wine. Stir to combine, and cook for about 8 minutes.
Step 4. Add in the eggs and green onions, stir to combine, and remove from heat. Add more green onions for garnish if you desire.
Step 5. Serve immediately and enjoy!
