Lamb chops with balsamic vinegar of Modena


  • 12 lamb chops
  • 200 g of tomatoes
  • balsamic vinegar
  • garlic
  • thyme
  • parsley
  • oil
  • salt
  • pepper


Blanch the tomatoes in boiling water for a few minutes, peel and remove the seeds. Chop a sprig of parsley with a sprig of thyme and a clove of garlic. Collect the mixture in a deep dish, add the chopped tomatoes, the balsamic vinegar, 4 tablespoons of oil, salt and pepper, mix well and leave to marinate for an hour. Thin the lamb chops with a meat tenderizer and cook on both sides on a pre-heated grill a few minutes per side. Pass the meat on a hot serving dish and serve with the balsamic vinegar marinade.
